If you haven’t noticed we’ve changed our diet quite a bit. I’m doing a lot more low cholesterol meals since Baba got his checked a few weeks back. Thankfully it turns out that a good amount of what we were making before already was, but I am enjoying trying some new things too. It also means we need to be planning out every meal and snacks, but I’m not going to put all of that info on here. I have a section in my control journal with pages I’ve printed out -> Linked Here <- that work perfectly for that and even help me keep track of what we need.
Last week we went overboard with new recipes and stuck to it pretty well… Didn’t get off track until the weekend. We liked everything we had on there, although the tuna recipe would have been a lot better (we could tell) if our avocado hadn’t gone bad lol. The best one was the stuffed chicken breasts. The poor kids ate earlier and were in bed by the time we made it so they missed out. If the fact that I devoured it in seconds despite not liking white meat wasn’t a clue… the fact that Baba talked about it for days after told me pretty clearly that it was one we need to do again… and prob sooner rather than later lol. I definitely recommend that one!

Monday – Leftover Corned Beef & Cabbage
Tuesday – Tuna Tetrazzini (playing with this recipe)
Wednesday – Roasted Chicken w/ Steamed Veggies
Thursday – Macaroni w/ Beef (not using this recipe, have one in a cookbook that we like. Substituting kind of cheese and leaving out eggs, wanted to show something similar though)
Friday – Mediterranean Chicken w/ Olives (repeated because we didn’t get a chance last week, only meal missed)
Saturday – Roast
Sunday – Alpine Mushroom Pasta
