Breaking myself away from working on next weeks menu to post this lol. I’m about 90% done with it, and do already have the just over 5lbs of pork curing in the fridge for boiling bacon (both for bacon and cabbage and Dublin Coddle). We are really looking forward to next week!

Wednesday – Pork a la Gloria (subbing pork chops for chicken breasts… not thick enough for my alt version of this but should still be pretty good)
